French say Oh LaLa


DAY EIGHT:


I made my first batch at french toast from the fixate book.

I have to admit I have enjoyed making things I normally would not make =)

In order to make it Gluten Free I used GF bread from Shaws.  It absorbed and took to the egg mixture really well!  

Great breakfast dish that I would absolutely make again.

DAY 1/2 Hammer & Chisel Exercises have been kicking my butt, but that is the point.  
So far I have done Chisel Balance which I found difficult the first day. The worst exercise was the bent over row to a squat while on one foot.

Today I did Hammer Pylometrics with Sagi which was HARD! OMG The amount of burpees.  I did what I could I am very sore. But I will continue the challenge.

Why did the Chicken cross the road?

DAY SEVEN!

Today I made Chicken with a Cabrese Salad from the Fixate book.  This was another one that I ALWAYS wanted to try and just never completed.

The only issue I had was the chicken breast.  I don't normally make chicken, my husband usually deals with the meat.

BUT I did it and I was very tasty =)

I would definitely make this again... I am loving this experiment.  This cookbook is so full of delish!  What should I do next?

Two for one!

DAY FIVE AND SIX!
 SWEET POTATO

ZUCCHINI BAKE

I made the two dishes presented as a side in the Fixate book right from the recipe.  I made the two dishes within a half hour and they are DELISH!

First the sweet potato, it was very easy, cut sweet potato, cut onion, salt, pepper and in the oven it goes.  I would prefer a softer potato but it was very tasty.

Second the Zucchini Bake was also very easy to make!! Four zucchini that I cut lengthwise.  Then it was Parmesan cheese, 2 TBSP of grated lemon peel, parsley, oregano, and into the oven.

I must say that both these have been on my list of things to make since I got the book and procrastination I never made them.  Well these were so easy and I have gotten many sides out of them! I stay relatively full for HOURS.  Also my tummy is happy because they are both Gluten Free!

Breakfast for Dinner?

DAY FIVE: POACHED EGGS WITH ASPARAGUS TOAST

Welp, I took a picture but I must have deleted it off my phone.  This was made on Wednesday of this week.  You know when life just gets the better of you? Well that was me this week 100%, after Tuesday I did not have time to work out and my husband and I were out of food.  So I will be back this week mind you!

So, for the poached egg, I instead did overeasy (easier than boiling water) and to make it gluten-free I made it without the toast, and I would have added GF bread, but alas we had to go grocery shopping desperately!

One of my favorite ways to make asparagus is to spray a glass flat with cooking spray, lay the Asparagus down, then bake on 425 for 6 minutes, take them out, turn them/roll them, put them back in for 6 minutes.  Once out I do Parmesan mixed with garlic salt and coat the asparagus with that.

Let me tell you it is HUSBAND approved.  Not only did he eat asparagus, but he went back for seconds.

So I would ABSOLUTELY try this again with GF bread, toasted, and maybe poached.

Where did I go wrong? Am I cliche?

DAY FOUR: CUCUMBER WITH HUMMUS


So I TRIED BLOG WORLD! I tried! Where Did I go wrong? HOW did they cut their cucumbers so beautifully? Blog world please enlighten me.  I got my veggie slicer and I tried to make the thin long slices. Maybe I need a longer slicer? But I could not get my cucumber slices long enough OR thick enough.

So I gave up after a couple of attempts and just cut my cucumber and got some hummus.

Will I make it again? I want to try this looks like a good idea but I need different technique or different equipment and any input would be beneficial! The meal is gluten free, vegan friendly, and dairy free.  I found it filling.  I would definitely add the red peppers next time!

You say Tomato I say Tomahto


DAY THREE: TUNA SALAD

Confession time: I would normally never use something as a vessel to eat out of but I stayed true to the picture in the Fixate book.


For dinner tonight I had Tuna, Red peppers, a tsp of mustard and a tsp of olive oil. I used a Tomato to put in the mixture.  One of the things I would change was the size of the tomato I got a smallish tomato, but I would get a medium to large tomato so all my mixture could fit inside.

I really liked this! I did not make it with tarragon, as that does not always make my tummy happy, but this is gluten free and Paleo-friendly! I am still feeling full from the meal almost three hours after consuming!

21 day fix container equivalent is 1 green, 1 red and 1/2 teaspoon.

When life gives you eggs, you got to make that omelet

DAY TWO: PORTABELLO MUSHROOM AND GOAT CHEESE OMELET 2/101
 

This one is worth posting, I slightly burnt my omelet compared to the picture in the Fixate book. The recipe was simple ingredients eggs, portabello mushrooms, I used honey goat cheese, and a teaspoon of olive oil.

The equivalent 21 day fix containers are: one green, 1 red, 1/2 blue and a teaspoon.

This meal is gluten free and Vegetarian =) so my tummy is happy, and a happy tummy is a happy Christie.

Note: this was my first time making an omelet and this was one of the reasons why I avoided this recipe.  Well I am happy to say that I would definitely make this again! Also, for MANY years I avoided goat cheese because I thought it would taste weird but I tried it on a whim and LOVE it.

Another note, I did not end up doing the cize exercise Friday, BUT I am planning on starting today and having my rest day be Saturday.

The Spark of Creation

Hello Blog world,

My name is Christie and I am a fitness coach, auditor, and wife.  If you told me as recently as three years ago that I would be into health, wellness, and making a better life for myself.  I would have laughed and said that I was never that girl growing up and will never continue to be that girl.  Well, after a year of following the 21 day fix and Cize, I have to say that I love workout out and when I don't it affects my overall health.

Recently I purchased "Fixate" Autumn Calabrese's cookbook and some of the foods scare me, whether it is something I have never eaten or something that takes too long.  I love my food quick and easy.

So for those who are interested in learning more about Fixate, I will be making one recipe from it daily and blogging about it.  I will share pictures especially (what it is supposed to look like, versus how it came out), how long it took me to make, how it tastes, and my rating scale which is easy will I or won't I ever eat that particular thing again.

Oh, there's a catch, because of my PERSONAL dietary restrictions I will be making ALL recipes Gluten Free.  The ones I alter in any way, I will post the recipe.

I am also going to be following the Cize workouts for 30 days.

DAY 1: BANANA PEANUT BUTTER BLISS SHAKEOLOGY

MY RECIPE:
1 cup unsweetened almond milk
1 packet of chocolate shakeology
1/2 fresh banana
2 tsp peanut butter
5-6 ice cubes
Blend

This took me less than 5 minutes to put together.

Overall I do not like banana flavored things, HOWEVER this is AMAZING! So Yummy and smooth =) I would definitely make again!

Even though Shakeology is not certified gluten free because of where it is made, I have never had any sideffects from drinking.  Bottoms up!
